How to eat more beans for breakfast
You should eat beans for breakfast. We can hear you saying: thank you, but no thank you. Well we say: no, thank you! And also: hang on just a minute while we suggest a few very practical and delicious ways to do so.
And of course we'd like to start with the why. It's pretty straightforward.
- You get protein and fiber instead of sugar. Which means steady, sustained energy to keep you feeling fueled until lunch, or longer.
- You're eating a real, whole food. Better than a protein shake or a bowl of fiber cereal.
- You're not eating a chocolate croissant or a glazed doughnut.
Okay, now a few ideas for how-to. Note that for all of these ideas, using canned beans is totally acceptable.
Idea 1: Beans with a fried egg
Warm up some beans, top with a fried egg or two, and drizzle the whole thing with some good extra-virgin olive oil. Other possible additions: a handful of salad greens, or a piece of toast.
Idea 2: Breakfast tacos
Warm up tortillas. Warm up beans. Scramble a few eggs. Sprinkle on shredded cheese or scoop a bit of salsa on top.
Idea 3: Granola parfait
